A festival in honor of pink soup was held in Vilnius on June 1, 2024. Cold beetroot soup (saltibarsciai in Lithuanian) is a traditional Lithuanian dish usually served in summer and made with buttermilk or kefir, hard-cooked eggs, cucumbers, dill and pickled beetroot which gives the soup its bright pink color. Vilnius Pink Soup Fest is held this year for the second time and kick-start the summer season in the city.
